Sheri's Stuffed Shells

1st Day of the New Year and I didn't have to cook!!!

What a Treat!

I updated this site while Sheri made dinner and it was YUMMO!!

  • 1-16 oz. box jumbo shells

  • Baby spinach

  • Garlic

  • 1-32 oz. container of ricotta

  • 1-8 oz. package of cream cheese

  • Parmesan cheese

  • A bag of shredded Italian cheeses

  • 1-24 oz. can tomato paste

  • Basil

  • 1 egg

  • Italian seasoning

  • Crushed red pepper

  • Salt & Pepper

  • 1 pt. heavy whipping cream

  • 1/2 C. milk

  • 4 Tbs. butter

  • 2 Tbs. flour

First, cook the noodles.  Drain and lay open-side-down on a towel.

Saute two cloves of chopped garlic in olive oil.  Add baby spinach until wilted.  Remove from heat and let cool completely.

In a large bowl, mix cream cheese, ricotta, shredded Italian cheese, and parmesan cheese.

Add egg and spices to cheese mixture.

When spinach mixture is cool, add to cheese mixture.

Chop basil and add half to cheese mixture.  Save half for garnish.

Coat the bottom of a 13x9 pan with a thin layer of tomato sauce.

Stuff the shells with the cheese mixture and arrange in pan.

Cover noodles with tomato sauce.

To make white sauce, heat butter and garlic.  When butter is melted, add flour.  Slowly add cream and milk.  Stir and allow to thicken.  When thick, remove from heat and add parmesan.

Pour white sauce over noodles.

In a 350* oven, cook for 20-25 min.

Garnish with basil before serving.

The Finished Product!!!

Thanks Sheri!!! You can come back home and cook whenever you want!!!
