Taco Mac & Cheese

This recipe is sooo good, and also NOT so good for you...but what the heck, sometimes a little comfort food cures all!!!


I only have one picture of this recipe..its pretty much a "dump" recipe and doesn't need any specific instructions...Also I usually triple this recipe, depends on how many people you are feeding!!

  • 1 lb. ground chuck

  • 1/3 C. Thick and Chunky Salsa

  • 1 1/2 tsp. Chili Powder

  • 8 oz. Elbow macaroni, uncooked

  • 8 oz. Velvetta cheese, cut into chunk

  • Crushed tortilla chips, chopped green onion, diced tomato and sliced black olives...optional

Brown meat and drain.

Put meat back into pot and stir in 2 3/4 C. water, salsa and chili powder (I also add crushed red pepper flakes to give it a kick)

Bring to boil, then stir in macaroni, cover and simmer 10 minutes or until water is almost absorbed.

Add velvetta and stir until melted.

Garnish with the optional ingredients if desired.
