Linguine & Zoodles with Shrimp Rating Star

Yumm, I mean what could go wrong with Shrimp, Zucchini and Linguine, right?? These are some of my favorite things!!!

Linguine and Zoodle with Shrimp

1 lb. Shrimp, Shelled and Deveined

1/3 C. Extra Virgin Olive Oil

4 Cloves Garlic, minced

Salt & Pepper

3 Medium Zucchini

1 Box Linguine Pasta

3 T. Butter

1 Lemon, zested and Juiced, about 3 T. of Lemon Juice

1 tsp. Red Pepper Flakes

1/2 C. Parmesan Cheese

Fresh Chopped Italian Parsley

Rinse, devein and remove shells from the shrimp and add them to a medium sized bowl. Drizzle with 1 T. Olive Oil and add 2 cloves of the garlic, Season with Salt & Pepper, toss together and set aside.

Trim the ends of the zucchini and use a spiralizer to create zucchini noodles or "Zoodles". Be sure to cut the Zoodles into shorter pieces, otherwise you end up with one big long Zoodle!!!

In a large skillet, add 1 T. Olive Oil, heat to medium, then toss shrimp until no longer pink, remove to a separate dish.

Cook pasta according to the pkg. directions for Al Dente, Drain pasta, but reserve 1/2 C. of the water after cooking.

In the same pan, heat butter, remaining Olive Oil, and remaining minced garlic, toss, then add the lemon zest, lemon juice, red chili flakes and 1/2 C. of the reserved pasta water.

Now add the zoodles and toss to coat with sauce. Add the shrimp back in and season with salt and pepper if needed. Now toss in the Linguine noodles.

Top with Parmesan Cheese and Chopped Italian Parlsey.
