Beef & Bean Burritos

I saw these on Facebook and had to try them...they brought back great memories to when Dad & I were going out.  On 4th of July they used to have a carnival in Mokena Park and Dad & I attended it, but soon got hungry, Dad said he knew of a great place to get a burrito called Pat's Dairy Delight, it was located on LaPorte Road and Wolf, where the Berkots is now.  So we walked down and he bought me my first fried burrito and it was sooo good that all these years later I remember it!!

This recipe doesn't come close to my memories but it was good, but just that, good...not

*Note to self...If I ever make these again, try adding a few Chipotle Peppers in Adobo sauce, maybe some cilantro, they needed some flavor and heat!!

Beef & Bean Burritos

1 lb. Ground Beef

1 Onion, diced

1 Can Black Beans, drained

1 tsp. Red Pepper Flakes

1 Envelope Taco Seasoning

1 16oz. Can Refried Beans

6 12" Flour Tortillas

1 C. Mexican Cheese

1 C. Canola Oil

Sour Cream & Salsa (Optional)

In a large skillet, cook beef over medium heat until no longer pink, drain.

Add meat back to skillet and add the onion, black beans, Red Pepper flakes and Taco Seasoing, stir.

In a small saucepan heat up the refried beans.

Spoon about 1/3 C. refried beans on each tortilla, top with 1/4 C. beef mixture. Sprinkle with cheese. Fold sides and ends of tortilla over filling, roll  up.

In a large skillet, heat the oil, then brown burritos in oil on all sides.

Serve with Sour Cream and Salsa.
